Lightly grease an ovenproof dish (e.g. 20cm square) with olive oil.
Place the tomatoes and tomato puree with the oregano, onion and garlic powder into the dish and mix together.
Chop the sun-dried tomatoes into tiny pieces and add to the above and mix again.
Chop the kale into small pieces and add to the above with the soy beans and mix again.
Use a spoon to make a well in the mixture and crack an egg into the well. Repeat for each egg.
Bake in the oven for approximately 25-30 minutes or until the egg whites have set.
Serve on a plate with sliced bread.
Notes
A great recipe for the weekend (due to the slightly longer preparation/cooking time) that can be served for breakfast or as part of a lunch or dinner. A vegetarian option that is rich in iron.

Eggs and Soy. Wheat and Gluten if serving with bread (but check the label for other allergens).

Variation
Use frozen spinach instead of kale. Use pressed garlic and finely-chopped onion instead of dried versions.
